Bang Bang Cauliflower

Spicy, Sweet, Sticky, Crunchy, Soft..ALL of the ABOVE. These will have your mouth watering and people fighting over the last bite. SO moreish, these VEGAN Bang Bang Cauliflower Bites will transport you onto the streets to schezwan.

The ingredients:

1 full Cauliflower
2 Spring Onions
4 Cloves Garlic
1 Large White Onion
1/2 Cup Plain Flour
2 Tbl Sp Corn Flour
1 Tsp Chilli Flakes
3 Tbl Sp Honey/Maple Syrup
1 Tsp Black Sesame Seeds
1 Tbl Sp Tomatoes Puree
1 Tsp Smoked Paprika
Salt
Pepper
Sunflower Oil
2 Tblsp Soy Sauce

The Method:

Chop up the Cauliflower fleurets and soak in water for 15 minutes
Meanwhile mix together the dry ingredients for the batter - Plain flour, smoked paprika, half of the corn flour, Salt & Pepper - Add in 1/2 cup of cold water slowly to ensure there are no lumps
After the Cauliflower has soaked, add into the batter mixture and thoroughly coat.
In a shallow pan on a medium heat, put some oil and shallow fry the coated cauliflower until it softens and browns - usually about 8-10 minutes
Once cooked, remove from the pan and let cool - they should be slightly brown and crispy at this point
In the same pan, chop up the large onion and garlic, let it sweat until the onions look glassy - add salt to take out the moisture out
After about 5 minutes add in the tomatoes puree for colour and flavour - let the onions and garlic get coated untill a red-y brow colour.
Add in the Soy Sauce and let simmer for 2 minutes
Add 1/4 cup water with 1 Tsp of corn flour to help thicken the sauce
Add in the honey and a little more water to ensure there is enough to coat your cauliflower.
The glossy mixture should be deliciously caramelised and spicy - add in the spring onion and stir slightly
Top with black or white sesame and ENJOY.
