Carrot Cake

Vegan-ish again, so sorry it has EGGS in BUT i am telling YOU this is my fool proof carrot cake recipe! This is one for the archives as CARROT cake is a favourite in our house. Nutty, Spiced wholesomeness, plus it is SUPER easy! 

The ingredient: 

• 300g Grated Carrots 
• 300g Plain Flour 
• 300g Soft Light Brown Sugar 
• 3 Eggs 
• 300ml Sunflower Oil 
• 1 Tsp Bicarbonate of Soda 
• 1 Tsp Baking Powder 
• 2 Tsp Cinnamon Powder 
• 100g crushed Walnuts

The Method: 

• For cupcakes - preheat the oven to 180°C
• Whisk together the Sugar, Eggs and Oil
• Add in the Flour, rising agent and cinnamon 
• Add in the grated carrots and walnuts untill evenly distributed 
• Scoop into cupcake cases two thirds of the way to the top 
• Bake in the over for 20 minutes 
• D E V O U R 

We have topped ours with Buttercream but they ARE exceptional with or without the extra fluff.
