Chunky Guacamole

Chunky Guacamole
Avo is life! When we lived in Australia this was a staple as every hipster brunch place in the city where we would spend about $15 on a plate, we fell in love with Avocados! Extremely nutritious and filling the humble Avo has more potassium than a banana, making it a great source of fuel before or after workouts!  

This is our take on the traditional guacamole, a little chunkier for some bite with your breakfast. 

 

The Ingredients: 

  • 1 Large Avocado
  • Red Onion (to taste)
  • Cherry tomatoes
  • Chilli Flakes/1 green chilli
  • Sea Salt 
  • Olive Oil 
  • Coriander 
  • Lime

The Method: 

  • Cut the avo in half, remove the stone and slash through both halves before scooping out into a bowl  (1 full avo is enough for about 3/4 slices of bread depending on how stacked you like yours.) 
  • Chop the cherry tomatoes into quarters and slice up as much onion as you like - we only put a small handful as red onions can be abit strong. 
  • Pop everything into one bowl, drizzle with olive oil, salt, pepper, the chilli/flakes and finally add the coriander 
  • Finally squeeze on some lime to cut through the fat - not essential but the acidity helps to cleans the pallet with every mouthful.

This is a 'go-to' recipe for us, it's the perfect base for breakfast, as a snack or a side salad to a gorgeous meal - high in fat and flavour its GREAT for working bodies and minds..
