Crispy Roast Potatoes

A staple in our household and I am sure it will become a staple in yours! Our Crispy Roast Potatoes always have us drooling.. Plus they are SO easy to make..its just the technique...

Ingredients: 

• 3 Large Maris Piper Potatoes 
• Salt 
• Pepper 
• 5 cloves Crushed Garlic 
• Fresh Rosemary 
• 30/50 ml Olive Oil 

The Method: 

• Wash and cut the potatoes into 3cm cubes with skin on, they do not need to be perfect. 
• Steam the potatoes for 15 minutes until they start getting a little fluffy 
• Meanwhile pre-head the oven to 200°C 
• 5 Minutes before the potatoes are steamed, add the oil to an oven proof dish, crush in the garlic and throw in a handful of rosemary leaves
• Let the oil heat up 
• Once the potatoes are fluffy, in the pan shake them about so they loosen up. 
• Add the Salt and pepper to taste. If you fancy it this is the stage to add other spices, sometimes we add dried oregano or garlic powder, paprika and chilli flakes work so well too! 
• Then carefully add the fluffed and spiced potatoes to the hot oil. 
• Cook at 200°C for 20 minutes, until golden brown. 

These are perfect for a midweek mix up or a Sunday roast! It is all in the technique. Be patient, steaming and roasting results in extra fluff on the inside and extra crispy, crunch on the outside.
