Date & Walnut Loaf

The prefect compliment to a cuppa and a chit chat. This naturally sweet date and walnut loaf is the perfect balance between indulgence and an afternoon pick me up. Once again this is a VEGAN!!

The Ingredients: 

• 225 g pitted Dates (roughly chopped)
• 2 tsp Baking powder
• 85 g of Butter (softened)
• 85 g Caster Sugar
• 25g Soft Dark Brown Sugar
• 120 ml Boiling Water
• 225 g Plain Flour
• 85 g Walnuts (roughly chopped)

The Method: 

• Pre-heat the over to 180 °C
• In a bowl add the dates, sugar, butter and hot water - incorporate and let sit till the water turns brown and caramelly
•  Whisk the egg untill frothy 
• Mix the dry ingredients together and gently fold into the web mixture (do not whisk or OVER mix) 
• Add in the roughly chopped walnuts  
• Line a loaf tin with baking paper and pour in the chunky mixture
• Bake for 40 minutes and DEVOUR...
