Jeera Quorn

So, truth be told Jeera Chicken was a staple in our house growing up. The spiced pieces of meat sizzling the the pan always got our tastebuds tingling...lets just say the quorn DID not fail...we took the classic recipe and swapped our the chicken for quorn its superior, planet friendly cousin...

The Ingredients:

1 Large White Onion
400g Meat Free Quorn Fillets
2 Shallots
3 Cloves of Garlic
a smudge of Ginger
Olive Oil/Sunflower Oil
1 Tbs Cumin Seeds
0.5Tsp Mustard Seeds
1 Tsp Ground Cumin
1 Tsp Ground Coriander
half a bunch Fresh Coriander
200ml veg stock
1 Tbs Tomato Puree

The Method:

In a wok, heat up the oil on a medium to low, add in the onions, shallots and cumin seeds
It is all about patience, add a touch of salt to draw out the moisture in the onions and cook off until a soft golden brown.
Add in the Ground Cumin and Coriander, mustard seeds, ginger and garlic
Finley chop and add in the coriander stalks
Cook for a further few minutes
Add in the Quorn and coat with the delicious spiced onions
Top this up with the Tomato Puree & coat it all and cook for a few minutes
Add in the 200ml of Vegetable stock, combine it all together and let it simmer on a low to medium heat for 10 minutes
Top with coriander leaves..

We served ours with ready made Nan with lots of butter..and we ATE with our hands and heart..
