Salted Caramel Vegan Protein Pancakes
Salted Caramel needs to be drizzled all over me, EVERYDAY. and PANCAKES are LIFE...and these are literally the easiest and MOST delicious pancakes you will ever make..

And guess what guys - they are VEGAN, and they are "good"ish for you, but most importantly they don't damage our planet! 

We have used the most incredible ingredients for these too, we are utterly obsessed with the Pico Salted Caramel Dark Chocolate and Hazelnut M*ilk Chocolate available at your local Sainsbury's. Plus the chocolate is: 

  • Vegan Friendly 

  • Certified Organic 

  • FairTrade Cocoa that is sustainably sourced

  • 100% Natural with no artificial flavours or colourings 

It is now our FAVOURITE and only chocolate choice. YUM! 

Poo has been on a bit of a health kick this year, and she's been sipping on the Vanilla Vegan Protein from Bulk which she has also added to the pancakes - you can use any protein powder you like but WE definitely LOVE this one.  

 

The Ingredients: 

  • 1 Cup Plain Flour
  • 1/4 Cup Bulk Vegan Vanilla Protein Powder 
  • 1 Tbsp Baking Powder
  • 1/2 Tsp Sea Salt 
  • 2 Tbsp Golden Syrup 
  • 1 Cup of Water 
  • 80g of Pico Salted Caramel Chocolate 

The Method: 

  • In a bowl whisk together all the dry ingredients 
  • Depending on what protein powder you are using add in vanilla extract, the one we use has a vanilla flavouring..
  • In a measuring jug dissolve the syrup with the water 
  • Add the wet ingredients into the dry ingredients and mix until incorporated
  • Chop up the delicious Pico Salted Caramel Chocolate
  • Let the mixture sit for 5 minutes whilst the baking power helps the uncooked mixture rise into a fluffy batter 
  • Melt come coconut oil in a non stick pan and scoop about 1/3 a cup onto the hot oil 
  • Let it cook for 2/4 minutes on each side depending on the heat 

That is is...ENJOY!! 

We ate ours with abit of vegan butter and a drizzle of syrup. Swap the chocolate for berries or the flour for Almond Flour for extra yumminess. Use the quantities here as a base for all your protein pancake needs!
