Sweetcorn Fritters

Quick, EASY & delicious..1 apology our sweetcorn was from a tin and TO be honest with you it is an EASY cheap alternative to whip up when there isnt much else in the house. We accidentally didnt "smoosh" our sweetcorn enough so ours turned out a little crumbly but the recipe below should fix that up for us... 

The Ingredients: 

• 1 large Tin of Sweetcorn 
• 1 Small White Onion
• 125g Plain flour
• 25ml water 
• Squeeze of lemon
• Chilli Flakes to take 
• Garlic Salt
• Salt & Pepper
• Coriander  

The Method: 

• Blitz 1/3 of the sweetcorn into a paste to help bind the mixture together 
• Chop up the onion as small as possible 
• Incorporate all other ingredients adding the price to taste 
• Rip up and throw in the coriander leaves 
• Smoosh together and patty up
• In a hot pad let cook for about 3/5 minutes each side

We love these for breakfast of even as a snack, make LOADS and you can put them in the freezer to whip out at any point! GREAT source of fibre..
